<p>It is the sole responsibility of the Sauerkraut Royalty and their parents to do the following tasks. They have the full support of the Sauerkraut Weekend Committee and the Phelps BDTC office.</p>
<ul>
<li>Build a Float for Sauerkraut Weekend</li>
<li>Find Cars for Sulfur Springs Parade</li>
<li>Receive donations for parade float&nbsp;decorating and candy to throw.</li>
<li>Write a Thank You to each of the&nbsp;Merchants and locals that donate their time, money or supplies towards activities.</li>
<li>Ensure royalty is at each of the events listed on their schedule.</li>
</ul>

Sauerkraut Royalty

<p>The Phelps Sauerkraut Festival began in 1967 with a one-day program (The Home of Silver Floss Sauerkraut). The Phelps Chamber of Commerce started the Sauerkraut Festival because Phelps was one of the largest producers of sauerkraut in the world. Eventually, a committee made up of members from the community and community organizations took over the various aspects of this festival with the support of the <a href="http://www.agrilinkfoods.com/silverfloss/index.html" target="_blank" rel="noopener noreferrer">Silver Floss Sauerkraut Company</a>&nbsp;(now&nbsp;<a href="http://www.sauerkrautnews.com/" target="_blank" rel="noopener noreferrer">Great Lakes Kraut Company</a>&nbsp;&ndash; a part of&nbsp;<a href="http://www.agrilinkfoods.com/corp/index.html" target="_blank" rel="noopener noreferrer">Agrilink, Inc.</a>) and Birds Eye Foods.</p>

<p><strong>2013</strong>&nbsp;saw the reformation of the sauerkraut committee into the&nbsp;<strong>Phelps Sauerkraut Weekend committee</strong>. This committee, again composed of community organizations, expanded the festival into a village-wide four day event which includes the&nbsp;<em><strong>Mustang Rally of the Finger Lakes at the Phelps Community Center, Public Market Place in the downtown, events at the American Legion and of course carnival rides and community booths at the carnival site on Ontario Street</strong></em>.</p>
<h3>Sauerkraut Factories within the Village of Phelps</h3>
<p>The Seneca Sauerkraut Factory, located at the West end of Main Street, was sold to Seneca Foods, Waterloo, NY and the building was demolished in December of 1994. The Silver Floss/Empire State Pickling Company, located on Eagle Street, Phelps, NY, was sold to Curtis-Burns Inc of Rochester on September 1, 1965. It was then sold to Comstock Foods. Canning ended in 1985, but cutting continued in Phelps and eventually went to Shortsville and Gorham.</p>

<h3>CHOCOLATE SAUERKRAUT CAKE</h3>
<p>1 pkg. devil&rsquo;s food cake mix (18.25 oz)<br>2/3 cup water<br>3 eggs<br>1/2 cup vegetable oil<br>1 cup Silver Floss sauerkraut, rinsed, drained and finely chopped</p>
<p>Combine cake mix, water, eggs and oil in large bowl. Blend at low speed until moistened. Beat 2 minutes at high speed (electric mixer) or by hand. Stir in sauerkraut until well mixed. Pour into well-greased and floured bundt pan or tub pan, two 8 or 9 inch round cake pans, or 13 x 9 inch pan. Bake at 350 deg. until wooden pick inserted in center comes out clean and cake springs back when touched lightly in center: 35 to 45 minutes for bundt or tube pan, 25-35 minutes for round pans, or 30-40 minutes for 13 x 9 inch pan. Cool 15 minutes (25 minutes for bundt cake); remove from pan and cool on rack. Topping: For a spectacular effect, spread 1 can of Comstock Cherry pie filling on top of bundt cake.</p>

<h3>SILVER FLOSS SAUERKRAUT SPICE PIE</h3>
<p>By: Lois Cheney (Sponsored by Comstock-Michigan Fruit)</p>
<p>3 large eggs. slightly beaten<br>1/2 cup sugar<br>3/4 tsp. ground cloves<br>3/4 tsp. ground cinnamon<br>2 tsp. flour<br>1 cup raisins<br>1 cup chopped walnuts<br>1 cup Silver Floss sauerkraut, drained (8 oz. can) &ndash; do not squeeze dry</p>
<p>Cream eggs and sugar. Add spices and flour to egg mixture, and mix well. Rinse and chop sauerkraut and add to mixture. Stir the mixture well to separate the sauerkraut. Fold in walnuts and raisins, and pour into bottom crust of your favorite 8&Prime; two crust pie recipe. Top with second crust or lattice strips and seal. Bake at 400 deg. for 30-35 minutes, or 375 deg. for 40-45 minutes.</p>

<h3>KRAUT SWISS STEAK</h3>
<p>1 lb.lean round steak 3/4 inch thick<br>Salt and pepper<br>2 cups Silver Floss sauerkraut<br>1 cup tomato juice<br>1 medium-sized onion, sliced</p>
<p>Place steak on broiler rack; sprinkle with salt and pepper. Broil 3 to 4 inches from heat 5 minutes on each side, or until browned. Place browned steak in skillet; add undrained kraut, tomato juice and onion slices. Cover and cook over low heat 1 hour and 30 minutes, or until tender. Serves 4.</p>

<h3>KRAUT AND FRANK FOLDUPS</h3>
<p>1 can Silver Floss sauerkraut, drained<br>1 tbsp. prepared mustard<br>2 cups biscuit mix<br>1 cup processed American cheese<br>2/3 cup milk<br>8-10 franks<br>Caraway seed to taste</p>
<p>Combine kraut and mustard. Cook over low flame until thoroughly heated, stirring occasionally. Combine biscuit mix, cheese and milk; mix thoroughly. Roll out to 1/8 inch thickness on lightly flowered surface. Cut into 8 or 10 5 &ndash; inch squares. Place a whole frankfurter diagonally on each biscuit square. Place &frac14; Cup kraut mixture over center of each frankfurter. Overlap and seal two opposite corners of biscuit dough across top of kraut. Brush top of fold-ups with 1 Tablespoon milk. Sprinkle with caraway seeds. Place on greased baking sheets. Bake in hot oven (425 deg. 12 minutes, or until done). Serve piping hot.</p>

<h3>PHELPS FESTIVE KRAUT</h3>
<p>In soup pan, place water to cover sauerkraut and add &frac14; tsp. Sugar and salt to water. Cook for 20-30 minutes. Bring to boil and simmer. Drain water well. While kraut is cooking on stove, chop up onion fine. Put butter in large fry pan on medium heat, add onions. Cook until brown and turn down heat. In another small fry pan cook the ground pork. Make certain it is broken into fine pieces. Add pork when done to fried butter and onions. Mix and add 1 tablespoon brown sugar and sauerkraut. Mix well. Fry 5-10 minutes. Add gravy and mix will. Add salt and pepper to taste. Serve warm.</p>

<h3>SAUERKRAUT CHEF&rsquo;S SALAD</h3>
<p>3 &frac12; cups Silver Floss sauerkraut, drained<br>2 tbsp. minced onion<br>&frac14; cup finely diced green pepper<br>&frac12; cup grated raw carrots<br>1 cup Swiss cheese, cut in thin strips<br>1/3 cup chili sauce<br>2/3 cup mayonnaise (or low calorie mayonnaise)<br>2 or 3 hard boiled eggs<br>Slices of salami or other cooked luncheon meat<br>Lettuce leaves<br>Salt and pepper to taste</p>
<p>6 &ndash; 8 servings</p>
<p>1. Combine sauerkraut, onion, pepper, carrots and cheese; mix well.<br>2. Mix chili sauce and mayonnaise together and season with salt and pepper to taste.<br>3. Combine sauce mixture with sauerkraut mixture and toss lightly.<br>4. Make a bed of lettuce in a salad bowl and top with the salad mixture. Garnish with sliced hard boiled eggs and luncheon meat. Serve well chilled.</p>

<p>(An old fashioned favorite with a zesty touch for a delicious change.)</p>
<p>3 &frac12; cups Silver Floss sauerkraut, drained<br>6 cups cooked, diced potatoes<br>2 hard boiled eggs, chopped<br>&frac34; cup mayonnaise (or low calorie mayonnaise)<br>1 tsp. dry mustard<br>&frac12; tsp. paprika<br>Salt and pepper to taste<br>6 &ndash; 8 servings</p>
<p>Combine sauerkraut, potatoes, and eggs; toss lightly and chill. Add remaining ingredients and toss lightly, but thoroughly. Serve chilled.</p>

<p>The Community Vendors/Marketplace hours: August 1st &ndash; 3rd, 2024</p>
<p>Booth locations are located at the Phelps Firemen&rsquo;s&rsquo; Hall.&nbsp;&nbsp;Vendor set up begins August 1st from 1 &ndash; 3 pm and takedown is immediately after event ends.</p>
<p>Single Booth: $50 Grounds (no less than 10X10)<br>Double Space: $ 100 Grounds (please contact us if you require more than 10X20 space)</p>
<p>Contact us for any special needs. I.E. Trailer space or electricity</p>
<h3><strong>Agreement:</strong></h3>
<ul>
<li>Cancellations must be made in writing.&nbsp;<em>Cancellations after TBD are not refundable.</em></li>
<li>The following will not be eligible for exhibition at the event: knives, weapons, or smoking paraphernalia of any kind.</li>
<li>You must provide your own display equipment, set up your equipment, and personally attend your exhibit for all hours that the show is open</li>
<li>You will be set up outside and you need to be prepared for any weather. For safety reasons, you must tie down your booth and provide your own leveling of your set-up. Booths start on the curb and stretch back over the sidewalk.</li>
<li>Electric will not be provided. If you really need electric, please call to discuss options.</li>
<li>You are responsible for collecting and paying NY State sales tax (currently 7.5%)</li>
<li>No drinking alcohol or smoking will be allowed in the vendor booths.</li>
<li>No pets are allowed, with the exception of guide or service dogs. If you do bring your pet, you will be asked to remove them.</li>
<li>It is understood that your area shall be cleaned after the close of business and during business hours as required.</li>
<li>Phelps Sauerkraut Weekend Committee reserves the right to terminate this contract at any time if these policies are not adhered to.</li>
<li>Agreements will be honored on a first come, first serve basis.</li>
<li>Phelps Sauerkraut Weekend will not be held responsible for any damage to vendors materials or property due to theft, adverse weather conditions or improper set-ups.</li>
</ul>
<h3>Release:</h3>
<p>As an exhibitor, I agree to comply with the rules and regulations of this event. That, in consideration of my&nbsp; application being accepted, I intend to be legally bound; that I do hereby, for myself and my heirs, executors,&nbsp; administrator, successors, and assigns release and forever discharge any and all rights and claims for damages&nbsp; which I may have or hereafter accrue to me the Town and Village of Phelps, the Phelps Sauerkraut Weekend&nbsp; Committee, the Phelps Fire Department and the Phelps Ambulance Inc. officers, volunteers, members, and&nbsp; board of directors for any and all damages, losses, and injuries sustained to me and/or my property while on the&nbsp; Phelps Sauerkraut Weekend grounds.&nbsp;&nbsp;</p>
<p>I hereby agree to indemnify, hold harmless and defend the entities from any claim of action for property&nbsp; damage, personal injury, and / or wrongful death. I attest that I am physically fit and am responsible for my own&nbsp; actions.</p>
